You don't need to use StructInsert, you can create structure keys just
like the one you created above:

<cfset mappings = StructNew()>
<cfset mappings["/login"] = "e:\inetpub\webroot\fortstewart-sm\login">
<cfset mappings["/includes"] = "e:\inetpub\webroot\fortstewart-sm\includes">
<cfset this.mappings = mappings>
