If you are accessing a database on a remote server, and you have two options, one of them being web service calls, and the other being ODBC, I don't think there's any doubt that the ODBC route would probably be faster.
But it does seem extremely unlikely that any remote service, such as salesforce, would allow ODBC access to their system.
