The latest hotfix is 8010003. http://kb2.adobe.com/cps/511/cpsid_51180.html
The cumulative hotfix 3 contains all the prior hotfixes, so delete everything else in that folder then restart the ColdFusion service. There should only be one file in that directory when you are done. If you won't want to get the latest hotfix for some reason, then you would have more than one file in that directory. You would have 8010002 plus whichever individual non-cumulative hotfixes that came after that that you want to install.
