I don't know that it's written anywhere, but I'd make the same recommendation as Laura. The default instance is used as the source when you create a new instance, so any datasources, etc that you set up for that will be copied to new instances. Adobe folks have told me that I should consider it to be analogous to the JRun admin console, which is where you used to go to define new instances.
