This is my preferred approach as well, just don't show the emails but integrate them into a contact form and link to that. It's far better IMO than using an image which is a real pain for a user of the site to have to copy an email out of. I do find cfformprotect works great for preventing form spam and is FAR more user friendly than nasty captchas.
