Also, make sure you set the "Simple Mail Transfer Protocol (SMTP) service" startup type to "automatic"; I installed SMTP on a 2008 R2 VPS a few months ago and discovered post-reboot about a week later (after emails stopped arriving) that the service wasn't set to automatic startup by default!
