Check and decrement the quantity available AFTER the order is completed, but
before you insert the final order into the database.
You could use <cfschedule> to run a process a couple of times a day that
cleans up unfinished orders though. If you have access to the cf
administrator it's even easier, just set your template to be run as often as
you want.
