Say a user entered a date into a text field, and you want to work with it
without using CFINSERT or CFUPDATE, then ParseDateTime() converts it into a
real date object

You can't insert into some databases without it being in ODBC format (if
using the ODBC driver), and CreateODBCDate() won't always work on string
definitions of dates
