Nick,

If you really mean "manually on a pc", when you install Adobe Acrobat to
create PDF files, it installs a print driver which "prints" to PDF files.
So in a true manual sense, you pick File / Print from the program menu.

A little less manually, you can print from applications to .ps PostScript
files, then have Adobe Distiller (comes with Acrobat) "watch" the folder and
convert files to PDF automatically.  However, there are licensing issues
about using this as a "server".

Does anyone have any idea how to convert documents

I believe there is a plugin for QuarkXpress that does this?
As for MS Publisher, I have no idea but I bet it's nasty...
