I'm sure you'll get plenty of responses, but I wanted to point out a few
things based upon my experience with various hosts:

- make sure that client vars are configured to use ODBC, not the
Registry - otherwise performance will suffer, affecting the customer
- ease of configuring ODBC datasources - many companies require you to
email them, and take a couple of days to get it done (this can be easily
automated)
- scalable packages - I'm not talking about storage or bandwidth.  Most
hosts throw X number of clients per server (oftentimes in the hundreds).
I understand that this is cost effective.  If I want "cheap", I
recognize that I'll be sharing with hundreds.  However, I'd like to see
packages where I can choose my level of exclusivity on a server, and pay
accordingly (for example, something like $30 to share with 300, $50 to
share with 100, $80 to share with 50, etc, with the same amount of space
and bandwidth per package)
- security - very few, if any (I haven't seen any exceptions, though I'm
sure they're out there) know how to properly implement CF security.  The
answer is to usually disable *key* tags and features, (though some
foolish companies leave them open, with no restrictions) - it's possible
(and safe) to enable things like RDS, CFFile, unlimited custom tags,
etc, if advanced security with sandboxes is *properly* implemented.
- have a large quantity of the *standard* free (or commercial, and pass
the cost on to the customers) custom tags pre-installed (both CFX and
CFM) - perhaps even some COM objects as well

I (though I think I'm speaking for many) would be willing to pay more
for a host that goes above and beyond.
