You would use the cf function createdodbcdate (for just the date) or 
createodbcdatetime to include the time as well.  Note: time
fields in a database are real numbers so if you insert only the date then the time 
will be set to 12:00 midnight as well (there
really is no such thing as a date field that doesn't contain a time as well).

Example:

<cfquery ...>
insert into mydb ....
#createodbcdatetime(now())#
</cfquery>
