Yes, CF MX uninstalls very well. Uninstall it using the uninstaller, then delete the cfusionmx directory, and you're all done. You can also have both running on your machine without any problems. You should be able to just install CF 5 and it'll take care of the setup. If you've got CF MX hooked to an external web server, you'll have to do a little tweaking to get them both using the same web server, but not much.
