One really simple option is these guys :http://www.wush.net/ subversion.php
nice and cheap, and means your repository is available anywhere on the internet. Tie that in with eclipse plugins or tortoiseSVN and you're laughing. In terms of CVS vs SVN - SVN is a more modern build of CVS essentially, so go with SVN.
