Windows Server 2003 on VMWare ESX Server. Been running CF8 on there since it came out and loving the performance! Or are you asking what Windows Based VM platform? i.e. VMWare ESX Server is not Windows.
I've not tried CF8 on a Server 2008 VM Instance yet.
