The way I understand it according to this article: http://www.w3.org/International/O-charset.en.php, is that the server and client need to agree on the encoding for the page to display correctly. By using <cfhttp charset>, we are specifying it to our server, what type of charset it is retrieving, which it then passes on the browser. The browser then converts it to unicode for correct display. Hope I have got it right :-).
