I've done this type of thing before.
I find its useful to have a hidden field that contains the original value for each
dynamic form field.
That way when you come to process the form, you only need to write the values that
have been changed, and not update potentially every record in a table just because one
value was changed.
i.e.

<cfloop query="myQuery">

</form>
</cfoutput>
Oh, and I'm in the record ID in the fieldname camp (sorry Adam!).
