This just sounds like the classic "Move items between two select boxes"
problem.

One box has all the items the user can choose from (the catalog).

The other has the list of items they have chosen (the shopping cart).

In between the two boxes are two buttons - one to add items to the
"shopping cart" and one to remove them.

Once you have that you have a couple of options.....

1. When they press a button, go back to the server and see what they have
said should happen, adjust both lists, and redisplay
2. Use Javascript on the buttons to do the moving between the list boxes
without a call back to the server.

In both cases, you would have another button to say "Finished".  This
would process what was currently in the cart and then ask for any other
relevant information.

If you want to have a button next to each item - you can - but you would
probably then want a button next to each item in the cart too (for
"remove").

You could still do all this without using a select box and just using
tables and/or divs and could still decided to either use a Javascript
method or a server-side method.
