This is where I was suggesting before that having multiple CF instances on a box could help leverage the resources better. Imagine you have 2GIG memory but the jvm only seems to peak at 400mb. Might get better performance from the box running two instances (or more) flat chat rather than the single instance.
There's lots of doco on JVM optimisation at the Sun site for each of the JVM versions. I'd recommend starting to read through that lot since CFMX's default JVM is Sun.
