But then just now I did a cfdump on it, which only gives me the first row of the XML.

If you run a FOR XML query in query analyser you'll see that it serves the XML split 
in rows, I'm a bit puzzled how I can work with this output from MS SQL?

Before this I worked with MS SQL XML support for IIS, which serves the result directly 
as a XML file, which I guess is another option to just use that and then CFHTTP the 
result and save it as a file, which is the end result I am after...

Even so, surely it must be possible to work with the output somehow in CF?

Try using Associative-Array-Style access to the member name instead.

e.g.

#test["XML_F52E2B61-18A1-11D1-B105-00805F49916B"]#

The bit in quotes could be a variable:

#test[columnName]#
