But won't that only show the most recently added product to the table? Also
a cross database compatible is maxrows="1" in the cfquery tag.

IF on MS SQL add TOP 1 to your select
And add ORDER BY NEWID()

Example

SELECT TOP 1 *
FROM product
ORDER BY NEWID()
