I've used quite a few, but the only ones I've spent any amount of time with are ArgoUML and UML Studio.
ArgoUML is not bad for a free product, but there's something about it that I just don't like. I can't put my finger on exactly what it is, but it's probably got something to do with the UI. UML Studio from pragsoft is my definite value for money recommendation. If you don't mind working with lisp syntax, it also allows you to script the generation of stub code from models and models from code. I wrote a script to generate CFC stub code from models about 18 months ago, but I lost it when my hard drive bombed and haven't bothered to re-created it. I'm also looking at adding UML editing and round-trip CFC generation/updating to cfeclipse, so watch this space.
