Who do you mean by "we"?
Guessing this is addressed to me and what you are actually asking (and grabbing the chance for blatant plug <g>):
"We" is mort bay communications, the oldest and most experienced CF Hosting provider in the country. If you go to:

Nowadays we host other stuff like PHP, .asp, .NET, etc., mainly business sites, CMS, etc., as well as CF but we still have the original server running CF3.1 and (O'Reilly's) Website, which will bring back memories to more than a few folk, even it is not running either any more.
Currently we are building a BlueDragon server with the free edition on it for low-cost CF6.1 equivalent hosting and a CF7 Enterprise box for our premium shared CF clients.

version matter? Are you looking only at CFMX and beyond? Or are you including one's that offer earlier versions as well? I remember my partner saying he'd found one with CF5 recently, so if you're including that I can asking him what it was.
For everyone's reference we run everything from CF4 to 6.1 and will have
a 7 box ready by mid-March.
(We still have the 3.1 server but no clients any more :-( <g>)
