I develop everyday on my 17" PowerBook. Both ColdFusion and BlueDragon are supported for development on a Mac, so that certainly isn't a problem.
Agreed, the Mac is a great development environment for ColdFusion - I have JRun, CFMX 6.1, CFMX 6.0, BD3.0, BD6.1 JX, Tomcat and a bunch of other stuff all running happily side-by-side.
Databases are a tricker issue as the major commercial players don't support the Mac.
Oracle 9iR2 is a free download for Mac.
I've generally had bad experiences with Windows laptops - a year or two is all they last before they fall apart on me. But I've had Mac laptops last the best part of ten years:

I had a 520c from new and it's still going strong (although owned by someone else now!).
