I do win2k and linux just dandy. Map the drive on your windows box (via a samba share), and you're set.
You'll still need a "move to production" setup, but you've got an advantage if you're running Linux on both ends, because you can use rsync, which pretty much blows the pants of ftp or webdav. If you want to get fancy, make an Ant task for rsync, and you can call it direct from the Eclipse toolbar.
