There's nothing to stop you from creating the native XML structure for the
web service request and then calling CFHTTP, including headers, to pass that
XML to the web service endpoint.  We, in fact, use this method for a couple
of complex web services that CF was incapable of translating on its own.

IMO, that's the easiest way to do it if it requires an HTTP header.

Those functions don't let you create HTTP headers, just SOAP headers.
They're completely different.
