Hi,
yes, Remoting is available in all versions of CF, and it is also installed by default. If your cfforms work, then Remoting should work (I think you already figured that out).
Regarding how to use it to populate the different controls, I covered several of them. All the lists have dataProvider, it is different if you want to populate text fields, checkboxes, etc. Check the posts in this category (with title "populating a ... with Flash Remoting"), as they explain the specific treatment you need to give to each particular control:
