I would NOT rely on session scoped variables in a multi-step form without validating that the correct object is loaded in the form before persisting the data. If a user uses the back button to back up into a partially completed form step after going off to look up or copy information from another record, your data may easily become corrupt.
I wouldn't use an array of objects for dropdowns. A query works nicely. Objects come in very handy when validating data tho'! And I've found jQuery to be very handy when it comes to dynamically populating dropdowns. Objects are just one tool in the kit.
