Sparkey remembers the already reviewed dates, but if you can't complete the reviewing in one session and want to continue next time, then, next time you load the app, you'll have to review the rest of the dates from your last app loading and the new ones in order to see your matches (that's why it may look like you have to start from the beginning each time).
Number of dates for reviewing can sometimes be larger than you prefer, and that depends on how many of your friends, and your friends' friends are using the app. You can consider it as a price for you to be able to review non-friends for dating. That number cannot be narrowed down, in order to protect users' privacy.
