There are extensions that do this (e.g., Header Tools,
https://addons.mozilla.org/thunderbird/875/), although I'm not sure
which ones store the headers locally, and which on remote servers. Also,
Mozilla bug 114656 (https://bugzilla.mozilla.org/show_bug.cgi?id=114656)
added arbitrary labels for email messages, and it definitely does modify
headers on IMAP servers.
