As a practical matter, we can assume that production server's time will be accurate to NTP standards. In practice, real data lossage events will be quite rare (once every few years if we're having bad luck). Resulting "restore from backups" events will rely on backups an average of probably 8 hours old, with perhaps 48 hours maximum if we have bad luck again.
