Many many things. Just a few:
How about cells in a workspace; Input cells, Output cells, Graphics cells, Text cells, etc.. How about pattern matching and replacement, built in to every part of the language. Cleared variables (unassigned) evaluate to themselves. So, x+3 evaluates to x+3 unless x has been assigned a value (of 4 for instance, them it evaluates to 7), etc..
