AMD does just fine on Ubuntu (and for that matter, all Debian based distros). I’ve run ubuntu on AMD cpus from the Athlon days.
Air conditioning the room is not the solution, and definitely not a necessity for running one or two machines. There are ways to keep the computer cool regardless of operating room temps (within reason). Just make sure you have proper cooling (CPU Fans / an AIO if need be). Use pcpartpicker.com or something similar to make sure you choose compatible parts.
