Ok, it's official: I'm stupid :)

Cherokee is actually one fine piece of software, but I should actually look
at the whole screen before clicking "Save".

There are actually two changes to make to the PHP Interpreter information
source:
Connection: 127.0.0.1:9000
Interpreter: /usr/bin/php5-cgi -b 127.0.0.1:9000

... and I had only made one change, the second one.

Once all that is done, no need to install lighttpd, use spawn-fcgi or any of
that other stuff.
