Check the PHP cookbook, it's pretty straightforward: http://www.cherokee-project.com/doc/cookbook_php.html "only FastCGI-enabled binaries of PHP will work with the FastCGI handler." So I guess you have to install a fcgi enabled PHP interpreter. If I recall correctly, you're running RHEL based distro... try installing php-cli package. In CentOS it installs /usr/bin/php-cgi.
