It's been on the TO-DO list for quite some time now. Actually, that feature received lot of attention during the Cherokee Summit a few months ago. It seems you're not the only one interesting on enhancing cherokee-admin to support ACL & profiles. It looks doable from a technical point of view. However, it is not in the top priority tasks to accomplish within the new weeks/months, so I wouldn't expect it to be implemented for the next few releases. Hopefully it'll make it to trunk soon enough.
