Modern versions of the PHP wizard will configure php-fpm if it finds it on
the path. If it isn't doing so it's most likely either  because it hasn't
found php-fpm or because it's old enough for not supporting it.

If it's possible which command lines should I enter in the Source:

You can always configure a new Information Source, and the interpreter, and
select it from your "Extensions PHP" rule. That'd be enough.
