I'm not sure if I mentioned doing this to my Elky, but yes I did it.  I used a dremel with those tiny little cutoff wheels (I must've went through 100 or more) and trimmed the inner fender lips so there was about a 1/4" left.  Then I used a hammer and dolly to roll the 1/4" lip up.  When I was finished I had a lot more tire clearance, but the outside of the fender looked like crap.  Fortunately the body shop was able to make it pretty again.
 
I later learned a different way to do it.  Cut the lip into 1" sections with the cutoff wheel, then it will be much easier to fold/roll each section up and out of the way.  HTH.
