No Keith.. There is no step between 180 and 160 that I know of... And you right about the 160 just staying OPEN and not letting the Radiator. time to Cool the fluids... If infact.on a hot Day in Traffic and you only see 200 Deg. F.. Shezz I don't think I would do anthing.. Just make sure the Rad is clean and flowing free. the cluth on the fan ( if you have one) is operational.. and as a LAST resort and you car is not a 100% orginail type car.. get a High Flow Water Pump. like Steward of Weieand . This exchanges coolent faster thus closes the stat. faster = more time to STAY in the radiator...
