Your diagram is correct for small block as well as big block Chevys.  You can either 
put the temp sender in the intake (like you have) or in the head between 3 and 5.  I'm 
thinking this only applies to 69 or later heads though (?), not sure.  I don't know if 
there's really any proven preference for placement.  The head will get you the temp 
for the one side where next to the water outlet will get you the temp at the 
thermostat.

The boss above the oil filter is the best place for the oil pressure although you can 
also use a plug just above the pan rail on the drivers side front - see 
http://www.chevelles.com/showroom/396guy/oil_pressure_port_small.jpg.  Problem there 
is getting out the factory plug if its never been removed.  I had mine pulled when I 
had the block tanked a couple of years ago in anticipation of this.
