I've been through this all with my '67 as well. They did not have the Latch system back when my daughter was born and rode around with me, but the lap belts worked really well for the infant and five point baby seats. When my daughter outgrew the harness portion of the seat (40 pounds), I set up a four point harness. I drilled a hole and bolted the harness in the trunk and threaded it over the seat back.
With the new Latch system, I would likely want to use that since it is safer and so much easier to use. I don't know how the brackets work, so it is tough to figure out how to mount them. You might want to talk to the guy at the parts counter and see if they have some diagrams. If you can't buy them over the counter (who knows), you can look in junkyards. You will likely have to fabricate quite a bit to adapt it to your rear seat, but I think it would be a great way to go. As for others doing this, I would not bet on it. Adding the Latch to an old car is not something most people do. Usually, they just use one of their other cars...
