Like Bill said, all the major catalog suppliers sell the manuals which can add up $$$. I purchased the Chevelle SS Restoration Guide, Fisher Body Manual, Chassis Service Manual, Chevelle Assembly Manual, Chevrolet by the Numbers and several others all on Ebay or Amazon.com for between a 1/2 and 2/3's off the retail price which is what the catalog suppliers will charge you. Some looked like they were never even opened. A '66 dash is very easy to unbolt, drop down or remove - especially if there is no A/C.
