I was talking to the guy at the alignment shop here and he says that after I have finished my front end rebuild that I shouldn't put the shims back in the upper contol arm cross shafts and to just tighten themp up and take it to him and he will replace the shims as needed........I have read that you are to keep the shims and put them back in the same as you took them out and this will get your alignment close enough to drive to the shop.
I was wondering which way to go with this....Anybody have any experiences or suggestions..???

I would put them back in there to get it to an alignment shop.  Yes, it will be off, but it's better than having nothing in there.  If you put no shims in and you go to drive it, it could possibly destroy your tires in the short distance it may be to the shop, therefore your tires will never wear properly causing other problems such as wheel shimmy, pulling left or right, etc.
