I investigated the SFC a while back with a view to transferring the copyright of my TagSoup software <http://tagsoup.info>. The discussions I had by email and phone were extremely encouraging, but I never followed through out of laziness. I think, however, that they take a very sensible hands-off approach: they handle money and other assets (including copyrights), but leave technical direction to the existing project leaders. The list of member projects (Amarok, Boost, BusyBox, Mercurial, Samba, Squeak, SWIG, Wine among many others) is certainly encouraging. The project can exit the Conservancy at any time if we decide to set up our own legal organization later.
