I worked for an ISP, and I can tell you that just because they opened your email account, in no way would that make your files delete. The tec hit something to make them delete and I am sure it was an accident on his part. I would call the help desk support and speak to the manager of the department. Most ISP 's do have an archive and may be able to retrieve your files. Some only hold them for 24-48 hours though.
As far as your files deleting when you use Outlook, that is because Microsoft does it that way and does not give you the option to keep them on the ISP. It is not your provider who does that, usually. Incredi does give you that choice. You can always try it, and run some test. If you are not satisfied you can uninstall Incredi within minutes.
