Is is possible that she could have fallen or banged her head and her head
was sore and that is why she went to bite?

To test for food aggression,  put a couple of pieces of the chicken in dish
and once she goes to eat it,  try to take the dish away from her. If she
growls or goes to bite,
don't show the typical reaction of being afraid to be bitten and pulling
your hand back , but let out a big NO, and take the dish away from her. 
Wait a minute, get her to sit, and put the bowl in front of her and try
again. Repeat as often as it takes for her to get the idea that she is not
going to be rewarded for bad behavior. 

A lot of dogs will test out their owners to see if they can be the alpha in
the pack. It is so important that they need to learn the first time they do
it, that it doesn't work.
Then you won't have repeated episodes. 

If she only stiffens up when you touch her head, then maybe a vet check of
her skull is needed.

I've had Gigi since she was 6 weeks old and she's a little over 2 now. She
has never missed a meal or had to compete for food. She's always been an
only pet. Last night I made her some baked chicken breast. I patted her head
after giving it to her and she stiffed up and tried to bite me. I was
shocked. 

She has never growled, barked, or bit. She is free feed so I've never seen
this behavior. She takes food gently from my hand. I'm confused about this.
I tried to recreate the moment and the second time I petted her she didn't
growl, but did stiff up. Any advice? This is food aggression?
