Depends upon what you want to do it is bit of a "how long is a piece of string" question.
At the low end, most of the projects that I take on these days involve either one of the Atmel AVR family or TI's MSP430 family. Still get a few people who want to use 8051s [shudder]. For 32 bit projects, most of my clients use a member of Motorola's embedded PowerPC although from time to time we get requests to use one of the many ARM variants. As I said, it all depends upon what you want the controller to do.
