start with the Stamp2 to get familiar with programming micro-controllers, then, if you're feeling brave move onto programming PICs directly with compiled code using PICBasic Pro (see www.melabs.com).
PICBasic Pro uses most of the commands from the Stamp repetoir plus many, many more. Once you've achieved that, move on to PIC C. CCS do a great C compiler for PICs.
