It's probably meant to make bayesian-based spam filtering harder.

Bayesian filtering looks at which words occur in an email and
how likely they are to appear in a spam. Spams often contain
typical words like 'free', 'viagra', 'call', 'nigeria',
'unsubscribe' etc. whereas serious more-syllable words lack.

Bayesian filtering scores every word at say -100 to +100 and
than looks at the average over the whole of the email. By
adding a range of atypical words for spams, the spammer
hopes to neutralize the effect of the spam words he is using
in the body of his message.

Another, but less likely reason for adding a string of random
words, is that he wants to be able to recognize a spam that
is being returned to him and of which the from address may
have been changed.
