You can set the environmental variable in XCode by double clicking on the executable target. I'm not sure the logging code is enabled on OSX, the right place to look would be in chrome/common/ipc_channel_posix.cc, search for IPC_MESSAGE_LOG_ENABLED.
If that's compiled in, then if the env variable is set as jam says, you should get message logging.
