I heartily recommend MacVim ( http://code.google.com/p/macvim/ ). I
hear its fullscreen mode is pretty rad :-P

Having said that, XCode – like most OS X apps – support some emacs
keybindings. Your "Remove entire line" example is ctrl-a ctrl-k ctrl-k
in XCode.

I usually use some mix of MacVim and XCode.
